I can't get over the B-side choice here. While I admit it would also be weird to dig back a decade for previous Christmas songs, at least they'd be Christmas songs. (And it's not like this band ever had a major issue rereleasing songs or reaching back to grab oldies for singles, as "Susie Cincinnati" itself proves.)
Maybe "I'll Be Home For Christmas?" Or "White Christmas?" "Merry Christmas Baby?"
It's just really funny. "Hey folks, we're here to get you into that Christmas spirit. And then, a song about a cabbie from Ohio!"
I liked Sheriff's idea. Just bang out a Christmas cover.

That would have been ideal. I was just trying to cut them some slack!
But for sure, how hard could it be? Even if, being pessimistic, there's no Brian involvement--or Dennis, for that matter--Al, Carl, and Mike plus whatever session guys they wanted (or road band members) could do something in an afternoon. And I mean that literally: a basic track would take almost no time at all for most Christmas songs with a straightforward arrangement. The vocals, I assume they'd take longer, more care, some kind of harmonies to work out. But yeah, even so, we're not talking about none months and six studios or something.
Or what about "Silent Night," which they could have done a cappella presumably without a whole lot of effort! Mike, Al, Carl, and sure, ideally the other Wilson brothers, but if not, who cares? Bruce could jump in. Or Billy Hinsche. Whoever. It ain't rocket science.
But assuming they didn't want to do that, they still could have just taken one of their old Christmas songs.

Or, I'm fairly certain the alternate Drive In arrangement of Little Saint Nick hadn't been released at this time (I think it first appeared on a CD reissue in 1991).

You could even--if you were ambitious--do a hasty redo of the vocals, maybe even some instrumental overdubs, to make it sound more current. But just taking it as-is would still make more sense than poor ol' Susie, whom I'm really dragging through the mud here...
(I like "Susie Cincinnati!" Just not in this context. Hell, I'd have put it on Sunflower, as I like it more than a good half of that album.)
